Buddy's Potato Salad
A Family Tradition!
Makes 12, 1/2-cup servings
4 medium potatoes (about 1 pound)
1/2 cup diced onion
1/2 cup chopped celery
1/4 cup sweet pickle relish
1/2 cup light mayonnaise-type salad dressing
Remember to wash your hands!
- Wash, peel, and quarted potatoes. Place in saucepan, cover with water, and bring to a boil. Simmer until soft, about 15 minutes. Drain and cool.
- Combine onion, celery, pickle relish, and salad dressing.
- Cube potatoes and blend with dressing.
- Cover and chill several hours.
Make it a goal to concentrate on two new healthy habits a week. They could be to cook and eat together as a family, cut back on TV and computer time, or walk an extra mile this week. When you make health a priority, you improve both body and mind. Working toward your goal as a family makes it easier to stay on target.
